In this recording the orchestra plays the whole ending by itself, but there are choir parts for the last 12 bars or so.

Howard Blake: Walking in the Air (from the animated film "The Snowman"):
The original was a boy solo. This is a choir version. We do it with a boy solo on the first verse, then choir after.

Benjamin Britten: Ceremony of Carols.
Then, of course, there is always a movement or two from Britten's "Ceremony of Carols". Only uses harp, but might make for a nice change in the concert. You can find a number of recordings on youtube of all of the different movements. Here's one:

This recording is SATB, but can also be done with just treble voices (same arrangement and orchestration, just different voicing)
